Hidden Rose apples, a natural hybrid discovered in the Pacific Northwest around 1960, were only recently cultivated commercially. They’re tart yet mildly sweet, with a strawberry-lemonade flavor and striking pink to salmon-colored flesh. Best enjoyed raw and thinly sliced, they also hold their bright flavor and firm texture beautifully in baking.
